Texas Caviar
This fresh, fantastic dip reminds me a little bit of salsa. It’s made with garden vegetables and the addition of hominy make it unique and also healthy. I would be embarrassed if I told you how much I can eat of this yummy recipe.
Ingredients
1 can hominy, rinsed & drained
2 cans of black eyed peas, rinsed & drained
4 tomatoes, diced (I like Roma tomatoes for a firmer texture)
1 bunch of green onions (5-8), chopped
2 jalapeno peppers, chopped
2 cloves garlic, diced
1 or 2 green peppers, chopped
8oz. blended Italian dressing (I use a bottled pre-made dressing)
Serve with tortilla chips (our family prefers scoop chips!)
Directions
Mix all the vegetables together
Toss the hominy gently because it is soft
Refrigerate for at least 2 hours or even overnight
**After mixing all the ingredients in a large bowl I like to transfer it into a sealed,
large Tupperware and gently flip the Tupperware to coat all the vegetables.**
