Texas Caviar

This fresh, fantastic dip reminds me a little bit of salsa. It’s made with garden vegetables and the addition of hominy make it unique and also healthy. I would be embarrassed if I told you how much I can eat of this yummy recipe.

Ingredients

  • 1 can hominy, rinsed & drained

  • 2 cans of black eyed peas, rinsed & drained

  • 4 tomatoes, diced (I like Roma tomatoes for a firmer texture)

  • 1 bunch of green onions (5-8), chopped

  • 2 jalapeno peppers, chopped

  • 2 cloves garlic, diced

  • 1 or 2 green peppers, chopped

  • 8oz. blended Italian dressing (I use a bottled pre-made dressing)

  • Serve with tortilla chips (our family prefers scoop chips!)

Directions

  • Mix all the vegetables together

  • Toss the hominy gently because it is soft

  • Refrigerate for at least 2 hours or even overnight

  • **After mixing all the ingredients in a large bowl I like to transfer it into a sealed,

    large Tupperware and gently flip the Tupperware to coat all the vegetables.**
