Shrimp Scampi

Ingredients

  • 1 tablespoon olive oil

  • 5 tablespoons butter

  • 2 tablespoons minced garlic

  • 1-1/2 pounds medium fresh shrimp, peeled & tails removed

  • 2 teaspoons seafood seasoning (example, Old Bay)

  • 1/2 teaspoon salt

  • 1/4 teaspoon fresh ground black pepper

  • 1/2 cup dry white wine or chicken broth

  • 1/2 teaspoon crushed red pepper flakes

  • 2 tablespoons fresh lemon juice

  • 1/2 cup chopped fresh parsley

Directions

  • Place uncooked shrimp in a medium mixing bowl & season with seafood seasoning, salt & pepper, and set aside

  • On medium heat, melt butter & oil in large skillet, and add garlic

  • Add shrimp and cook on each side for about 2-3 minutes

  • Add white wine, crushed red pepper, lemon and fresh chopped parsley

  • Serve over rice or pasta
