Garlic Scape Pesto

Ingredients

  • 3/4 cup garlic scapes, cut in 1/2 inch pieces (approximately 10 scapes)

  • 1/3 heaping cup whole raw almonds, roasted

  • 1/2 cup olive oil

  • 1/3 cup parmesan cheese, hand grated

  • 1/2-1 tsp freshly squeezed lemon juice

  • 1/4-1/2 tsp kosher salt

Directions

  • Lightly spray small baking sheet with olive oil

  • Toss almonds onto baking sheet. Roast in oven 6-8 minutes at 350°

  • Remove almonds from oven and allow to cool

  • In a food processor, combine garlic scapes and almonds. Pulse until roughly chopped

  • Slowly add olive oil and parmesan cheese

  • Continue to pulse making sure not to liquify

  • Pulse lemon juice into mixture

  • Salt to taste.

  • This pesto recipe should have spreadable consistency with nice bits and pieces of the garlic scapes and almonds. Do not process to the consistency of a smoothie.

    *Serve with sea salt pita chips or crackers.
