Garlic Scape Pesto
Ingredients
3/4 cup garlic scapes, cut in 1/2 inch pieces (approximately 10 scapes)
1/3 heaping cup whole raw almonds, roasted
1/2 cup olive oil
1/3 cup parmesan cheese, hand grated
1/2-1 tsp freshly squeezed lemon juice
1/4-1/2 tsp kosher salt
Directions
Lightly spray small baking sheet with olive oil
Toss almonds onto baking sheet. Roast in oven 6-8 minutes at 350°
Remove almonds from oven and allow to cool
In a food processor, combine garlic scapes and almonds. Pulse until roughly chopped
Slowly add olive oil and parmesan cheese
Continue to pulse making sure not to liquify
Pulse lemon juice into mixture
Salt to taste.
This pesto recipe should have spreadable consistency with nice bits and pieces of the garlic scapes and almonds. Do not process to the consistency of a smoothie.
*Serve with sea salt pita chips or crackers.
