Crunchy Romaine Strawberry Salad
Salad Ingredients
1 package ramen noodles, crushed
1 cup roasted & salted pecan halves
3 tablespoons butter
1 large head romaine lettuce, chopped (10-12 cups)
1 crown broccoli, chopped (approx. 3-4 cups)
4 green onions, chopped
1 cup strawberries, sliced thick
Dressing Ingredients
1/2 cup red wine vinegar
3/4 cup sugar
1/2 cup vegetable oil (or 1/3 cup olive oil)
1 tablespoon soy sauce
3/4 teaspoon salt
1/4 teaspoon pepper
Directions
In a medium saucepan, on medium heat, combine crushed noodles (discard
seasoning pack) and pecan halves
Sautee mixture until it starts to turn golden - be careful not to over-toast!
Set aside to cool
Chop vegetables and strawberries and combine in large bowl
Toss together noodle and nut mixture with vegetables and strawberries
Dressing
Heat red wine vinegar and sugar together and stir until the sugar is dissolved
Allow dressing to completely cool, and then add remaining dressing ingredients (oil, soy sauce, salt, and pepper)
Pour dressing over salad mixture and coat thoroughly
Serve immediately
Serves 8-10
