Crunchy Romaine Strawberry Salad

Salad Ingredients

  • 1 package ramen noodles, crushed

  • 1 cup roasted & salted pecan halves

  • 3 tablespoons butter

  • 1 large head romaine lettuce, chopped (10-12 cups)

  • 1 crown broccoli, chopped (approx. 3-4 cups)

  • 4 green onions, chopped

  • 1 cup strawberries, sliced thick

Dressing Ingredients

  • 1/2 cup red wine vinegar

  • 3/4 cup sugar

  • 1/2 cup vegetable oil (or 1/3 cup olive oil)

  • 1 tablespoon soy sauce

  • 3/4 teaspoon salt

  • 1/4 teaspoon pepper

Directions

  • In a medium saucepan, on medium heat, combine crushed noodles (discard

    seasoning pack) and pecan halves

  • Sautee mixture until it starts to turn golden - be careful not to over-toast!

  • Set aside to cool

  • Chop vegetables and strawberries and combine in large bowl

  • Toss together noodle and nut mixture with vegetables and strawberries

Dressing

  • Heat red wine vinegar and sugar together and stir until the sugar is dissolved

  • Allow dressing to completely cool, and then add remaining dressing ingredients (oil, soy sauce, salt, and pepper)

  • Pour dressing over salad mixture and coat thoroughly

  • Serve immediately

  • Serves 8-10
