Joy Scout Hash
Ingredients
3 Tablespoons olive oil
2 Tablespoons butter
5 cups small golden potatoes, partially boiled and cut in large bits pieces
1 cup sweet onion, roughly chopped
4 ears of sweet corn, boiled and cut off the cob
1 teaspoon kosher or flake salt
1/4 teaspoon seasoned salt
Generous shake of garlic powder
Pepper to taste
1lb. bacon, cut up then fried and drained on paper towel
1/4 cup fresh parsley
Grape tomatoes
Directions
Partially boil potatoes with the skins on
Drain and cut into large bite size pieces
Heat oil & butter and start frying potatoes
Add onions. When slightly golden, add sweet corn
Season, then add parsley
Sprinkle with bacon and garnish with grape tomatoes
