Golden Buttermilk Pancakes

Ingredients

  • 2 cups all-purpose flour

  • 3 tablespoons sugar

  • 1 1/2 teaspoons baking powder

  • 1 1/2 teaspoons baking soda

  • 1 1/4 teaspoons kosher salt

  • 2 1/2 cups buttermilk

  • 2 eggs

  • 3 tablespoons butter, melted

Fruit Topping

  • 1/2 cup water

  • 1 tablespoon clear jel or corn starch

  • 1/2 cup pure maple syrup

  • 1 teaspoon raspberry jello

  • 3/4 cup red raspberries

  • 3/4 cup strawberries

  • 3/4 cup blueberries

  • 1 tablespoon fresh lemon juice

Pancake Directions

  • With a wire whisk, mix together flour, sugar, baking powder,

    soda and salt

  • Make a well in the center of the flour mixture and

    add the buttermilk, eggs and melted butter

  • Stir together with wire whisk, just until combined

  • Batter will be thick and slightly lumpy!

  • Allow batter to set for 15-20 minutes and then fry pancakes in skillet over medium heat in butter & a splash of vegetable oil

Fruit Topping Directions

  • Stir clear jel into water and place over medium heat, stirring

    constantly

  • Add maple syrup and raspberry jello and heat

  • Add fruits and lemon juice and heat until simmering but do not boil
