Fresh Veggie Salad

Ingredients

  • 3 cups zucchini & yellow squash, drizzle with olive oil, salt & broiled, then cool

  • 1-1/2 cup cooked couscous, salt to taste

  • Corn, 2 ears boiled, grilled and cut off cob

  • 1 cup tomato, diced or grape tomatoes cut in half, salted

  • 1/2 - 1 avocado, diced in large pieces

  • 1/2 cup red onion, sliced thin

  • 1/4 - 1/2 cup crumbled feta cheese

  • 1/2 lemon, squeezed over top of ingredients

  • Balsamic glaze, drizzled over top of ingredients

  • Extra Virgin Olive Oil, drizzled over top of ingredients

Directions

  • Arrange the ingredients in a medium/large shallow serving bowl

    Sprinkle with salt to taste

  • Squeeze lemon, then drizzle with balsamic glaze & olive oil

  • Mix all together right before serving
