Strawberry Ricotta Bruschetta
Ingredients
1 cup strawberries, diced
1-1/2 tablespoon fresh mint, chopped
1 Tablespoon extra-virgin olive oil
1 cup ricotta cheese
1 to 2 teaspoons strawberry jam
Toasted baguette slices
Balsamic vinegar glaze
Kosher or Flaky salt to taste
Directions
In a mixing bowl, combine first 3 ingredients, salt to taste
In a separate bowl, mix strawberry jam into ricotta cheese.
Toast baguettes until golden
Spread with ricotta cheese/jam mixture
Top each piece with strawberry mixture then drizzle with balsamic glaze
