Strawberry Ricotta Bruschetta

Ingredients

  • 1 cup strawberries, diced

  • 1-1/2 tablespoon fresh mint, chopped

  • 1 Tablespoon extra-virgin olive oil

  • 1 cup ricotta cheese

  • 1 to 2 teaspoons strawberry jam

  • Toasted baguette slices

  • Balsamic vinegar glaze

  • Kosher or Flaky salt to taste

Directions

  • In a mixing bowl, combine first 3 ingredients, salt to taste

  • In a separate bowl, mix strawberry jam into ricotta cheese.

  • Toast baguettes until golden

  • Spread with ricotta cheese/jam mixture

  • Top each piece with strawberry mixture then drizzle with balsamic glaze
