Strawberry Shortcake
Ingredients
2 cups white sugar
1/2 cup shortening
2 eggs
1 cup buttermilk
1 teaspoon baking soda
1 teaspoon cream of tartar
2-3/4 cups all-purpose flour
1 teaspoon vanilla
1/4 teaspoon salt
2-4 tablespoons sugar
Heavy whipping cream, whipped loose with a splash of white sugar, to taste
1 to 2 quarts fresh strawberries, stemmed and mashed, then sprinkled with brown sugar. (I also add 3 tablespoons of water and the juice of 1/2 lemon to mashed strawberries
Directions
Preheat oven to 350°
Cream sugar and shortening in medium size mixing bowl
Add the rest of the ingredients & mix well
Pour batter into two greased 8 inch baking pans
Sprinkle the top of batter in each pan with 1 to 2 tablespoons of sugar
Bake at 350° for 30 minutes
This is delicious served warm with mashed strawberries and whipped cream
