Strawberry Shortcake

Ingredients

  • 2 cups white sugar

  • 1/2 cup shortening

  • 2 eggs

  • 1 cup buttermilk

  • 1 teaspoon baking soda

  • 1 teaspoon cream of tartar

  • 2-3/4 cups all-purpose flour

  • 1 teaspoon vanilla

  • 1/4 teaspoon salt

  • 2-4 tablespoons sugar

  • Heavy whipping cream, whipped loose with a splash of white sugar, to taste

  • 1 to 2 quarts fresh strawberries, stemmed and mashed, then sprinkled with brown sugar. (I also add 3 tablespoons of water and the juice of 1/2 lemon to mashed strawberries

Directions

  • Preheat oven to 350°

  • Cream sugar and shortening in medium size mixing bowl

  • Add the rest of the ingredients & mix well

  • Pour batter into two greased 8 inch baking pans

  • Sprinkle the top of batter in each pan with 1 to 2 tablespoons of sugar

  • Bake at 350° for 30 minutes

  • This is delicious served warm with mashed strawberries and whipped cream
