Lemon Ice Cream Dessert

Ingredients

  • 3 cups crushed cornflakes (set aside ½ cup of mixture for the top)

  • 1/2 cup white sugar

  • 1 stick melted butter

  • 1/2 gallon vanilla ice cream, partially thawed

  • 1 cup frozen lemonade concentrate, thawed

  • 1/4-1/2 teaspoon fresh lemon zest

Directions

  • Melt butter, add sugar & cornflakes and stir over heat until we’ll combined. Press mixture into 13x9 glass dish. Chill 30 minutes or overnight.

  • Partially thaw ½ gallon of vanilla ice cream

  • With handheld electric mixer combine ice cream, lemonade concentrate and lemon zest. Pour over crust and garnish with 12-16 pieces of fresh lemon. Freeze for at least 2-4 hours.
