Spring Citrus Salad
Ingredients
8 cups of a mixture of romaine & other special lettuce varieties
1 cup purple cabbage, cut fine
1/2 cup purple onion, sliced thin
1/2 cup cucumber, cut in small pieces
1/4 cup pistachios, roasted & salted
1/2 cup cheese crisps
1 cup small bow tie pasta, cooked & cooled
1 red grapefruit, peeled & cut in bite size pieces
1 navel orange, peeled & cut in bite size pieces
2 cups chicken breast, grilled & sliced or cubed
1/2 cup bacon, fried & crumbled
1 avocado, peeled and sliced and served on the side of the salad
Small bowl of large curd cottage cheese served on the side
Lemon Dressing
Juice of a large lemon
Lemon zest, about 1/2 teaspoon
1 Tablespoon fresh parsley, chopped fine
1 Tablespoon purple onion, chopped fine
2 Tablespoons lemon infused vinegar or white wine vinegar
2/3 cup extra virgin olive oil
1 teaspoon poppy seeds
1 pinch of salt
1 Tablespoon honey (optional)
Directions
Mix together in a blender bottle and serve over salad. If using a small food processor, stir in poppyseeds, parsley and onion by hand after the salad dressing is blended in the food processor.
