Spring Citrus Salad

Ingredients

  • 8 cups of a mixture of romaine & other special lettuce varieties

  • 1 cup purple cabbage, cut fine

  • 1/2 cup purple onion, sliced thin

  • 1/2 cup cucumber, cut in small pieces

  • 1/4 cup pistachios, roasted & salted

  • 1/2 cup cheese crisps

  • 1 cup small bow tie pasta, cooked & cooled

  • 1 red grapefruit, peeled & cut in bite size pieces

  • 1 navel orange, peeled & cut in bite size pieces

  • 2 cups chicken breast, grilled & sliced or cubed

  • 1/2 cup bacon, fried & crumbled

  • 1 avocado, peeled and sliced and served on the side of the salad

  • Small bowl of large curd cottage cheese served on the side 

Lemon Dressing

  • Juice of a large lemon

  • Lemon zest, about 1/2 teaspoon

  • 1 Tablespoon fresh parsley, chopped fine

  • 1 Tablespoon purple onion, chopped fine

  • 2 Tablespoons lemon infused vinegar or white wine vinegar

  • 2/3 cup extra virgin olive oil

  • 1 teaspoon poppy seeds

  • 1 pinch of salt

  • 1 Tablespoon honey (optional)

Directions

  • Mix together in a blender bottle and serve over salad. If using a small food processor, stir in poppyseeds, parsley and onion by hand after the salad dressing is blended in the food processor.
